Enjoy a delicious burrito recipe

Yes, I know they are not perfectly shaped!

I’ve lost interest in going out to dinner. Cooking exactly what I want each day is much better and often just as delicious as going to a restaurant. And much less expensive. Plus Covid-safer.

Which leads me to this delicious burrito recipe, which we enjoy so much.  So easy! It can be made with meat or “meat” or no meat. You can add any of the ingredients we do, or fewer, it’s just as tasty.

Preheat oven to 350 degrees

INGREDIENTS

Large flour tortillas
1 lb. ground beef
1 can refried beans
1 packet lower sodium taco seasoning
Onion and bell pepper to taste
Dash or two Worcestershire sauce
Shredded cheddar cheese
Avocado or guacamole
Sour cream

  • Use the larger flour tortillas, as they fill much better.
  • Saute some onion and bell pepper. I like red, yellow or orange bell pepper, not green. Quantity is to taste.
  • Cook a pound of ground beef in a skillet. I dash in a bit of Worcestershire sauce. Once cooked, add a packet of taco seasoning and 2/3 cup of water. Bring to a boil. (I use lower sodium taco seasoning) Turn off.

Once everything is cooked, I spread refried beans on the tortilla. Add the cooked onions and peppers. Spoon in the cooked, seasoned beef. Sprinkle with shredded cheddar cheese. I like to add avocado or guacamole. Add anything you like. I serve it with sour cream but you can put it inside, too.

I fold each one up and put in a baking pan. They don’t HAVE to be perfect (see my photo!)

Cover with foil and bake for 25 minutes or until heated through.

Serve with sour cream and extra guac. So good!

This recipe makes me 9 burritos, so yes, you can feed a family of 4 if you’re stretching your food budget –with leftovers! Just depends how stuffed you make them. These keep and reheat well.

The taste rivals anything I’ve had at any Mexican restaurant. Let me know how you like it and what, if anything, you add to it.____________________________________________

    Sounds delish! I do keto but I could make it into an awesome salad minus the beans… or just eat the seasoned meat and toppings. I don’t let keto stop me from eating tasty things!

  2. Well said Carol !! You do have a way with words!! I can tell you from first hand experience with the loss of two children that you have an awesome understanding of how it feels to lose a child! Each loss of a child is different, just like the loss of your mom or dad ! However the empty space is the same for each child!! It’s hard to describe but it’s as if a piece of your heart is gone forever !! Thank you as always for your kind words !! Hugs Char❤
