Busy trying to get those last gifts wrapped? Fighting the crowds at the market as you stock up for the big dinner? Short of time?
Holiday parties, big meals, sweets–about now, you’re probably looking for something light, healthy and — most of all — easy to make for dinner.
I made this delicious pasta the other night:
Easy, healthy pasta with grated cheese & vegetables
Olive oil
Good grated cheese (Romano or Parmesan)
Brussels sprouts, broccoli, asparagus, tomatoes and other good veggies, any or all (I use lots)
Red, yellow or orange peppers (more tender than the green)
Onion
Chicken or shrimp
Garlic to taste
Spaghetti or any pasta (whole wheat or home-made, if you can)
Slice up and saute a pepper and some onion in olive oil with garlic. Steam veggies and mix in with pepper and onion at last minute so they get coated with garlic and olive oil.
{I eat it veggie-style, but you can saute chicken strips or shrimp if you want to add them. Even easier: cut pieces of store-bought rotisserie chicken.}
Make spaghetti (or any pasta). Drain.
Mix in vegetables, chicken or shrimp. Grate some cheese over it to taste and gently stir. That’s it! Because it’s chock-full of delicious vegetables, it’s tasty and it only takes a small portion to fill you up. It’s so delicious, I’d serve it to company.
