Easy, tasty summer lunch

We were having company for lunch and I wanted make something special that would tempt the taste buds of my friends. Two of them badly need to gain weight and I wanted to be sure they ate, but I didn’t want to slave away in a hot kitchen. I just wanted an easy summer lunch that they’d love. And that’s what I made.

Here’s a lovely open-face summer sandwich that makes a delectable and easy summer lunch. It’s just delicious, judging by the rave reviews of our lunch guests the other day.

Shopping list for this summer lunch

*  Sliced sourdough or other good bread. Delicious bread makes a great sandwich!
*  Ripe plums, sliced, not too thin
*  Goat cheese with honey infused in it
*  Fig preserves
*  Applewood smoked ham in thin slices. Great ham makes a great sandwich!

Aand when you’re done, this is what it looks like:  There’s half a large slice of toasted sourdough below the goodies, you just can’t see it because the ham slice is so large. This summer lunch is served open-face with fork and knife.

We served it with a simple, old-fashioned potato salad (recipe to come) and corn, but could have prepared steamed green beans or some other tasty vegetable.  I can’t tell you how much our guests loved this meal!

    Throughout my life, sandwiches were inevitably PB&J, Sliced bologna or cold cuts, or tuna. Imagine the world my friends are opening up to me! This is yet another example!

        I can imagine why. Sounds tasty! I love the sliced plum idea. Love plums to begin with, so the idea of adding them to sandwiches is appealing. We have a plum tree in the back yard, so we’ll be using some of them in sandwiches in future, for sure. Thanks!
