Easy summer recipes

Absolutely no one likes to slave for hours over a hot stove or oven in the summertime, including me. I’m sure you agree. And with the abundance of colorful, ripe produce available now, there’s no need to.

Tasty easy summer recipes are just a few easy steps away. What’s even better is that they are good for us. i’d be very surprised if you didn’t find at least a few that you’ll want to make right away. So here are my choices to add to your summer meal planning. I’ve made every single one multiple times and can vouch for their toothsomeness. Is that a word? It is now!

This easy summer lunch is scrumptious beyond belief. It’s one of our all-time favorites and last summer our company loved it, too. So simple.

I love herbed rainbow carrots any time of year, but I’m seeing some gorgeous, colorful carrots in my organic box this summer. That makes this dish an easy pick for summer.

Cold poached pears make a lovely dessert and is even portable for a picnic. Have I given you an idea? Here’s the recipe.

A simple summer salad in which the vegetables take the lead with very little else is the perfect healthy, yummy summer barbecue accompaniment.

If you like beets, this summer salad is for you. So simple, so delicious.

    Thanks for bringing Summer to Australia Carol. Although where I live in Sunny Queensland we could eat salads year round. I quite like the look of the beets recipe and the simple summer salad recipe.

    These are some great ideas to come out with some easy yet delicious recipes to make the best out of the summer. I would love fresh salads and smoothies out of fresh fruits. And I love drinking lot of fresh juices to stay hydrated anytime.

  28. I love salads any time of the year, not just summer. I would go as far as to say that salads are my favorite meal. You can eat a lot and not gain a lot of weight. That’s what I love most about them.
