Put lettuce in a big bowl. Add whatever quantities of the other ingredients that look right to you. I use one big peach or two small ones and handfuls of pecans (satisfying crunch!) and cranraisins (in a quantity that match the number I’m serving.) Small chunks of goat cheese add protein, and the honey infused kind makes it even more delicious.
Add dressing, toss and you are good to go with an easy summer salad to tempt any palate!
Hearts of romaine are my favorite lettuce, but you can use any kind or even spinach. I haven’t tried it with arugula but if you like the bitter, it might be a nice counterpoint to this salad’s sweetness. If you don’t have peaches use another stone fruit or it might be just as interesting with pears or in the fall/winter, with apples.
I use a giant bowl to toss my salad, the bigger the better. That way I can easily coat every bit with dressing.
If you make it, let me know what you think. Bon appetit!

Ohmyword, I just found my lunch for today!
Thank you so much, my friend!
Yummo! I often use strawberries & blueberries in this manner yummo! Subbing roasted pistachios for the pecans are delicious.
That makes it savory, a nice mix. The pecans keep the salad on the summer sweet side as they are candied.
Let me know what you think!
Yum.
Yep. So very yum.
Wonderful! You’re giving me ideas for dinner…
This one’s a can’t miss!
I love the flavor combinations. That’s my kind of salad.
I do, too. It’s on the sweet side. Lots of crunch.
Alexa, add honey infused goat cheese to my shopping list.
or you can add honey to plain goat cheese, which we’ve done.
Sounds yummy, although I might substitute another nut, pecans not a favorite.
let me know how it works out, meryl!
Love summer salads and this one look amazing.
