How to fix a quick and easy supper

Even though I am at home all day every day, I don’t always want to cook a full out meal. So the other cold day, I decided to make grilled cheese sandwiches and tomato soup for an easy supper.

I opened a container of tasty Pacific tomato soup  (our fave tomato soup) and heated it up.

My husband wanted a regular grilled cheese, which I made with Swiss cheese and whole wheat bread in a buttered skillet. For myself, I toasted a piece of bread, put a slice of Swiss cheese on it and microwaved it for 15 seconds.

So simple. The image above includes chips but we didn’t serve with chips.

It was yummy and filling. SOOO easy! And perfect for a winter day.

We’ve been making it every week recently and it really is a filling and delicious comfort food meal.

    Grilled cheese and tomato soup is my go-to when I’m cold, or just needing a little extra comfort! you and me, Carol…we’d get along just fine!

  2. I had this same hankering last week, after the weather finally turned cold: gluten-free bread and dubliner cheese in the toaster oven, and tomato/pepper soup. Well, a few tortilla chips as well. Such simple satisfaction.

    Going to make grilled cheese this weekend now. I love gruyere and use olive oil in the skillet. But it’s not buttah.
