My husband was the same, but now? different story. You could always start by serving it as a side dish. But it is super filling.
Like you, I’m not a vegetarian either but I do enjoy a good enjoy a good vegetarian meal. This looks yummy AND easy!

We’ve tried all the cauliflowers – white, green, purple, orange. Purple is my favorite, too. I like lentils, but tonight we are going to have a split pea soup (not vegetarian, alas). I never thought of putting lentil soup over a baked potato.

Sounds delicious, but I am not a lentils fan. I’ve tried. But I’ll go for the baked potato and veggies. And a little sour cream.
