French onion soup with sherry

I simply can’t keep this easy slow-cooker recipe to myself. It’s so fragrant and yummy you’ll want to serve it for company.

Slow Cooker French Onion Soup with Sherry

INGREDIENTS
6 Tablespoons of butter

4 cups of onions, sliced in thin rings

1 shallot sliced thin

1 Tablespoon white sugar

2 cloves garlic, minced

1/2 cup sherry

1/4 teaspoon thyme

1 bay leaf

sprinkle of salt and pepper

7 cups beef broth

8 slices French bread

1 Cup shredded cheese (Gruyere, Emmental, mozzarella, a mix)

I can’t keep this recipe to myself: The yummiest French onion soup, made with sherry, all slow cooked to fragrant perfection.

1.  Heat butter in large pot over Medium High. Cook & stir onions about 10 minutes, until translucent. Sprinkle with sugar.

  1. Reduce heat to Medium and continue to cook, stirring constantly, until onions and brown & soft, probably about 30 min. Stir in garlic and cook another minute.
  2. Stir sherry into mixture and scrape bottom of pot to dissolve browned food (deglaze).   Move onions to slow cooker.

3.  Pour in beef broth. and seasonings.  Stir.

  1. Cover and cook on High for 4 to 6 hours or Low for 8-10 hours.
  • When ready to serve, preheat oven broiler with rack about 8-inches from heat. Place bread on baking sheet and broil 1-2 minutes per side.

  • Combine shredded cheeses. Fill oven-safe soup bowls 3/4 full of soup and flat a bread slice in each. Top each bow with 2 T cheese mix.

  • Place bowls on baking sheet and broil about 2 minutes or until topping is lightly browned and bubbling.

  • Enjoy with a delicious red wine.

    The sherry makes this recipe a tasty twist on the traditional French Onion Soup. The recipe is very little work for a super-tasty meal that both guest and family will enjoy.
