Minted melon: delicious, light company dessert

INGREDIENTS
Melon
Fresh mint

STEPS
1. Visit your local farmers’ market and buy the sweetest yellow flesh melon you can find. Or orange flesh. That way you won’t need to marinate in a simple syrup. Avoid the sugar.
2. Chop fresh mint.
3. Be sure the melon is super-ripe before you cut it into bite-sized pieces.
4. Sprinkle with chopped mint to taste. The mint can be overpowering, so don’t over-do. Or under-do. (I know that helps)
5. Refrigerate several hours.

Listen to your company moan in ecstasy as they consume it.
