Easy one-dish recipes quick to prepare? I’m all over them. I love to cook, but sometimes I don’t want to spend an hour on a main dish recipe. Here’s one that’s great for cooler weather and you can adapt it to what you have on hand:
In my pantry
Delicious, hearty and well-seasoned lentil soup was sitting my pantry–I prefer home-made but for a quick meal, Trader Joe’s organic lentil soup is my go-to idea. But you could use any delicious canned or home-made lentil soup. The Trader Joe’s lentil soup has a bit less than two servings per can, be fore-warned. I used two cans for my recipe.
Bought a 10-pack at Costco and separated them to freeze
Aidell chicken-apple sausages were in my freezer. They’re simple to prepare, healthy and they taste great. I was sure they’d complement the lentil soup.
Small, organic new potatoes –just a few left over from our organic box –were also on hand. I’d been wondering how to use them, and an idea came to mind.
Here’s what I did–quick, easy one-dish recipe, hearty and flavorful:
1. Cooked two sausages and cut them in half-inch circles.
2. Cut potatoes in quarters and cooked in boiling water ’til tender. No salt.
3. Heated 2 cans of lentil soup. Added potatoes and sausage slices. Makes 3-4 servings.
4. Served steaming hot with a fresh loaf of artisan bread.
A small lunch portion
You could add other vegetables–onions, bell pepper, green beans, carrots. If you’re concerned about sodium, Trader Joe’s has plain lentils in the refrigerator case. Season them up with salt-substitute Herbamare and other herbs/spaces and add vegetables yourself.

Great idea! I love aidells! Might just put this on my grocery list…lentils are such a great source of fiber! Fiber makes me a better person! 😉
