Too many tomatoes?

It’s summer.

Maybe your garden is overflowing with tomatoes.

Or your neighbors just brought you a bagful.

Or you haven’t yet used the tomatoes you bought at the grocery.

Never fear. I have the absolute easiest and yummiest thing to do with all those tomatoes and that is this.

My world-famous recipe for bruschetta. Right HERE.

It’s a fabulous appetizer for a picnic or get-together. Or even for dinner at home.

Serve it with slices from a crusty baguette or even unsalted crackers.

It’s guaranteed to be delicious.

So go for it!

    Now I want it to be Summer and overflowing with tomatoes! I might just get some Winter ones anyway and have a go at making this. I haven’t had bruschetta fora very long time.

    • Mmmm… I’ll be making use of that recipe! Thank you! I’ve had several tomato sandwiches for lunches in the past couple weeks. Love, love, love tomato season. And, really, I’m not sure you can ever have too many of them. (Well, unless you don’t use them up quickly enough or get creative with the crop.)

    Unfortunately since it decided to rain 400 straight days in May and part of June the tomato crop in my part of the world has suffered :(.

    I wish I had a nice big crop of tomatoes. I miss picking them fresh off the vine and eating them. I love bruschetta so much it lets the taste of the just off the vine tomatoes really shine through!

  11. I certainly wish I had the problem of having too many tomatoes. Because I moved to the south a few years ago from the Midwest, growing is a little different here. The hot sun and constant humidity killed all my plants time and time again. Hopefully, I can figure it out and eventually have the problem of having too many tomatoes 😉

    No such thing as too many tomatoes. We have only received a handful so far, but that’s the norm in upstate New York. The season is way too short.

    When we have many tomatoes at home, we cook it as tomato sauce and save it on the fridge.

    There can never be too many tomatoes. I used to love grabbing them from my moms garden, rinsing them and eating them like apples.

  17. Now that it is gardening season, there are tomatoes EVERYWHERE! We have been using them in our spaghetti sauce, even our white sauces, burgers, sandwiches, and much, much more. I love homegrown tomatoes, PERFECT!

  18. I found a recipe for a really good homemade pasta sauce that I used to cook my tomatoes in a few years back. It was really good, and I need to make it again. Unfortunately, this year we don’t have enough tomatoes to do it.

  24. Tomatoes, so many things that we can do with tomatoes. Your Bruschetta recipe looks like a good option. Then there are so many ways we can use bruschetta.

  28. Yum! I love bruschetta and must try your recipe. Another thing I love to do with fresh tomatoes is serve slices with fresh mozzarella cheese, top with fresh basil and drizzle with balsamic vinegar. Soooo delicious.
