I love me some easy winter comfort food that soothes and tantalizes the taste buds. Easy, because sometimes I just don’t want to spend hours in the kitchen preparing. And filling, because, well, a full tummy is a happy tummy.
So here are some of my go-to easy meals for winter comfort food:
“Sandwich”
Love me Outer Aisle brand cauliflower “bread.” It’s a lower carb option and I’ve grown to like it with anything from tunafish to turkey. You can find it in the cooler section of the grocery store. So a quick and easy lunch:
I toast two slices of cauliflower bread. My filling is a slice of swiss cheese and dijon mustard. Tomato, if you like. The swiss cheese melts against the warm bread, but not too much. Voila! Easy and tasty lunch that’s good for us.
I’m over canned soups. I’m a fan of Pacific boxed soup. I add steamed broccoli, cauliflower or any yummy vegetable to a pan of soup–so delicious! My fave soups are their Creamy Tomato or their Butternut Squash. You can’t imagine how filling this winter comfort food meal is!
Yes, of course, toss some delicious croutons over it if you like!
Salad
Oh and here’s an easy, different salad: Your favorite lettuce, a handful of candied pecans, another handful of cranberries, some cut cucumber and cut up apple. Jazz it up more with a few wasabi peas! I love all the different crunches and that tart/sweet/hot combo.
In summer, peaches are a great addition.
One Potato / Two Potato
I’ve already shared how much I like to pour Amy’s Lentil Veg soup over a baked potato. But how about instead, a teaspoon of sour cream, steamed vegetables and a 1/4 cup of shredded cheese? Or some cottage cheese over a baked potato?
A cut up sweet potato baked after drizzling with olive oil and a generous sprinkling of cinnamon flips my switch on a cold winter day. It’s a filling meal in and of itself, even though it makes a delightful side for chicken or pork. Or anything.

Oh that sounds interesting. I’ve never had tempeh sausage.
