Ok, so maybe not the healthiest chopped salad recipe ever, but I’ve made a few adjustments that helps make it healthier. I came across a version of this on Carnie Wilson’s Instagram and it sounded so good I had to make my own version. All quantities to taste.
Carol’s Chopped Salad Recipe
. Fresh turkey breast (healthiest) or sliced deli turkey (processed)
. Chopped salami (get leanest you can but to get the taste it’s an unavoidable component)
. Chopped romaine (I don’t like chopped kale in salad but it could work)
. Olives (yes, salty so I rinse them)
. Fresh mozzarella cheese chunks or bits (I omitted but it’s a good ingredient)
. Red and yellow peppers that are sweet, hot or whatever. In jar.
. Fresh basil (I omitted)
Dress with Red wine vinaigrette (Plenty of recipes online or make your own)
My taste buds have dulled with time and like dishes that zing and pop–which this salad really does. Also –crunch is one thing that makes anything we eat so much more satisfying, and this chopped salad recipe definitely crunches. I used cooked turkey breast I had in the freezer, but you can make a breast fresh or sometimes buy it cooked or even use a rotisseries chicken breast at the grocery store.
For me it’s all about the olives and rinsing then a bit doesn’t impact the flavor that much. Do leave a bit of the salt, though. You really do not need salt or pepper in this chopped salad recipe.

Sounds delicious and healthy – sort of! I tried to eat kale but gave up. Interesting combination of turkey and salami.
Looks yummy. Good idea to rinse the olives. Never thought of that.
