Delicious, healthy salad recipe for any time of year

Filling and super tasty, this healthy salad recipe is a recreation of one I had at a restaurant the other day. It’s super-simple and makes a great dish for dinner guests as well:

Goat Cheese and Beet Salad

This is the base recipe but I adapted the proportions to my own taste:

Lettuce (I like romaine but you can use arugula or any greens you like)
Cooked beets, red or gold (I bought mine precooked as I didn’t have time to boil fresh)
Goat cheese (I bought mine already honey infused for extra taste)

Home-made dressing:

1/4 cup Dijon or mild coarse grain mustard
1/4 cup apple cider vinegar
1/4 cup or less extra-virgin olive oil
1/4 or less cup honey
1-2 cloves garlic minced (I used Trade Joe’s frozen, which I had on hand)
salt and pepper to taste

Everything but the oil goes in the food processor. Process it, then add the oil and process again. If you don’t have a food processor you can blend or mix it well.

I used Dijon mustard.

I used less olive oil than is called for.

Maybe not as much honey as 1/4 C.

I just kept tasting the dressing until I liked it. And it’s so tasty you really don’t need that much of it.

My version of this healthy salad recipe ended up vinegar-forward, which I liked. But my advice to you is to just taste it til you think it’s right.

    I absolutely love this salad. And the other day We served this dressing, loved it. And the people loved it. I had no idea how much I loved beets until a few years ago.
